Cinnamon Sugar Muffins

What you need:
For the muffin
batter:
1 ½
cup almond flour—blanched
2 tsp.
of baking powder—gluten-free
½ cup of confectioner Swerve sweetener
5 T. butter—softened
½ cup of heavy cream
1 TSP
of vanilla
2 T.
psyllium husk—pulverized
2 large eggs
1/2 TSP of ginger
1/2 TSP of allspice
1/2 TSP of nutmeg
For toppings:
1 TSP
of cinnamon
2 T
butter—melted
¼ cup Swerve sweetener—granulated
1. Set
the stove temperature to 350°F. Line a cupcake pan accompanied by silicone
muffin baking paper cups.
2. Whip
the confectioner sweetener, the butter, & the extract of vanilla in the
medium-sized bowl approximately 5 mins. until it becomes a smooth consistency
by the use of the electric mixer. Then beat the heavy cream and the eggs into
the mixture.
3. In
an additional medium mixing bowl, thoroughly whisk the remainder of the dry
ingredients which include almond flour, psyllium husk powder, allspice, baking
powder, ginger, and nutmeg, making sure the batter is smooth.
4. Then
add the wet mixture slowly into the dry ingredient bowl while mixing
continuously with the electric mixer to ensure it is combined.
5. Transfer
the batter to the cups already prepared. Put the pan into the heated stove and
bake it for 18 to 20 mins.
6. In
the meantime, use a bowl and whisk together the granulated sweetener, cinnamon,
and butter.
7. Use
a spoon in dusting the muffins’ topping while they are cooling so it melts into
the muffins and serve them warm.
