Keto Diet Recipe for Blueberry Muffins



Total Prep and Cooking Time: 30 minutes

Makes: 12 Muffins

Calories: 125, Protein: 6 g, Fat: 15 g, Net Carbs: 4 g


 



What you need:
½ cup of granulated sweetener Swerve

2 ½ cup of blanched almond flour

½ TSP of vanilla extract

¾ cup of blueberries

1 ½ TSP of baking powder—gluten-free

1/3 cup of almond milk, unsweetened

3 large eggs

¼ TSP of salt (optional)

1/3 cup of coconut oil—solid

 


Steps:

1.    Make sure the stove to set to the temperature of 350°F. You need to line a standard cupcake pan with silicone muffin or baking paper liners.

2.    Mix the baking powder, almond flour, salt, and sweetener in a big bowl used for mixing.

3.    Use a smaller saucepan, on medium heat, heat the coconut oil then put it slowly to a mixture of flour when completely melted. Then

mix the eggs, unsweetened almond milk, & the extract of vanilla into the batter and combine completely.

4.    When mixed thoroughly, carefully fold the blueberries into the mixture.

5.    Distribute the batter to the muffin cups. Bake for a total of 20 mins. They will have a golden texture when completely baked.

 



Tricks and tips:

 

 Using frozen blueberries is acceptable for this recipe. A better recommendation is using fresh blueberries as the bread will be more uniform and less mushy.
